The traditional Cabernet Tòcco


Cabernet Tòcco is the result of a blend of Cabernet Sauvignon with Cabernet Franc. It is a certified "Piave Cabernet DOC" wine with a certificate of suitability issued by Valoreitalia. Intense ruby color, dry, with a robust and persistent structure, it has light herbaceous notes and hints of cherry and cinchona. Two options are available: the "classic" matured in steel for one year, then bottled, and the "riserva," in the best vintages, matured in steel for one year and aged in tonneau barrels for another 10 months before bottling.

Production area: north of the province of Treviso, in the foothills of Montello, on stony alluvial soil around the farm.
Form of farming: Sylvoz with plants at 1.5-meter intervals in rows spaced 3.5 meters apart.
Variety: Grapes from our vineyards: 90% Cabernet Sauvignon, 10% Cabernet Franc.
Harvest period: Hand-picked in crates from late September to mid-October.
Wine-making technique: Red wine vinification with 6-8 days maceration with 2 daily pump-overs.
Matured in steel for 12 months with appropriate racking during the first three months and light filtration before bottling.
For the best vintages, maturation in tonneau barrels follows for another 10 months before bottling.
Alcohol content: 12.5% vol.
Annual production Cabernet Tòcco classico: 2000 bottles of 0.75 l.
Annual production for Cabernet Tòcco reserve: 800 bottles of 0.75 l.

The wine is sold and shipped in cartons of 6 bottles.
